Sugar and Flavored Sugar Syrups

Sugar Syrup

Ingredients

  • 1 cup sugar
  • 1 cup water

Directions

  1. Stir ingredients together in a small saucepan, set over low heat and bring to a gently simmer, stirring occasionally, until sugar is completely dissolved.
  2. Cover pan and simmer for 5 minutes.
  3. Remove from heat, let cool to room temperature then chill until needed.

This recipe makes about 1 1/2 cups syrup. Increase or decrease, as you like, using equal amounts of sugar to water.

Flavored Sugar Syrup

Spiced Syrup

  1. Follow instructions for Sugar Syrup above. Remove from heat and stir in one of the following: 3/4 teaspoon whole cloves, 2 cinnamon sticks, 3 star anise, or one 1 1/2-inch piece fresh ginger, thinly sliced
  2. Cover and let stand 20 to 30 minutes. Strain and let cool.
  3. Chill until needed.

Lemon or Lime Syrup

  1. Follow instructions for Sugar Syrup, adding to the pan with the water and sugar, the peel of 2 lemons or limes, cut into thin strips.
  2. Once cool, add 1 cup lemon or lime juice.
  3. Strain syrup through a wire mesh strainer, removing and discarding the peel. Chill until needed.

Berry Syrup

  1. Follow instructions for Sugar Syrup, then once sugar has dissolved, stir in 1 pint rinsed and stemmed raspberries, blackberries, or blueberries, or 3 cups sliced strawberries.
  2. Simmer, covered, for 10 minutes, stirring occasionally.
  3. Let mixture cool, then strain through a fine-mesh strainer, pressing to extract the syrup. Discard fruit.
  4. Chill until needed.

Fruit Syrup

  1. Follow instructions for Sugar Syrup, then once sugar has dissolved, stir in 2 cups sliced or cubed peaches, plums or pineapple.
  2. Simmer, covered, for 10 minutes, stirring occasionally.
  3. Let mixture cool, then strain through a mesh strainer, discarding fruit.
  4. Chill until needed.
