Fresh Corn Salsa

Ingredients

  • 4 ears fresh corn (kernels removed)
  • 1 cup green pepper (chopped)
  • 1/2 cup red onion (chopped)
  • 2 tomatoes (chopped)
  • 2 cloves garlic (chopped)
  • 2 tablespoons lemon juice or vinegar
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Directions

  1. Combine all ingredients in a large bowl.
  2. Refrigerate for at least 1 hour before serving.

Notes

  • This salsa can be used a a dip for tortilla chips or as a topping for fish, poultry, or meat.
