Virtual Hugs and Kisses to Everyone this Valentine's Day,

It has been a tough season for everyone due to the cold and flu going around, so give your hugs and kisses to your loved ones cautiously this Valentine's Day.

Since I had a positive response with my first recipe post I will submit another one that goes well with winter comfort foods. This is a recipe that I received from my cousin whose church created and sold a cookbook from the parishioners' tried and true recipes. One of the items that I tried was this zucchini bread, however I have changed it up a bit to make it more appetizing to my son when he was a little boy. He loved it then and loves it to this day and does ask for me to make it for him on occasion.

Zucchini Bread

2 c. sugar

1 c. oil

3 eggs

2 c. grated zucchini

2 T. vanilla

2 c. flour

1 t. baking soda

1/2 t. baking powder

2 T. cinnamon

Optional: 1 c. raisins, 1 c. chopped walnuts, 1 t. salt.

Preheat oven to 350 degrees. Spray 2 loaf pans with Bakers Joy or Pam. Beat eggs until lemon colored and then gradually add in the sugar. Mix the oil, zucchini, and vanilla to the eggs and sugar. In a separate bowl mix the rest of the dry goods together: flour, baking soda, baking powder, and cinnamon. Combine the two mixture together until blended. Evenly pour into the 2 loaf pans and bake for 1 hour. Cool for a good 15 minutes and enjoy. Serve with some butter if you would like.

Candy, Candy, Candy

Looking to fill your candy dishes and jars with some lovely treats, then stop by the commissary to indulge in your favorite chocolates. The Bakery/Deli also has fresh baked Valentine treats for the sweet tooth in us all. If you have someone with dietary needs, the produce department has a selection of spring flowers/plants to gift to someone special. Feb 13th may be Italian Food day but Valentine’s is the day of love. Why not combine the two days and cook an Italian dish for two. It is cheap and easy to make without the hassle of having to drive in the winter or wait for a table to open.

Chinese New Year

For those who like to celebrate the Chinese New Year we have an international aisle that is sure to help make your Asian inspired recipes come to life. Lucky foods to eat for Chinese New Year are: Fish, noodles, dumplings and spring rolls, sweet rice balls, rice cake, tangerines and oranges. These items are to provide happiness, longevity, wealth, family togetherness, fullness, and increase prosperity. Since this is the Year of the Dog, let’s spoil man’s best friend with treats and toys. Our pet aisle has the essential items to care for our favorite pooches. Just because this year goes to the dogs doesn’t mean that you cannot spoil your favorite feline or bird. We have items to care for them as well.
